Grilled crisp onion: one more delicacy for enjoying Summer and staying light

In the middle of Summer here we are and excellent vegetables, delicacies from local region, are at hand for making simple, fast, light recipes. It is the turn for the sweet red onion from Acquaviva delle Fonti, in the North of Apulia. I found them at the food market, just few steps away from home, and today I served them grilled and crisp at lunch time.

You need simple ingredients to prepare them: breadcrumbs, extra virgin olive oil, parsley, salt, pepper, grated parmigiano reggiano (make your own doses, according to your tastes and preferences).

First of all, peel the first layer of the onions and dip them in boiling water for 10/15 minutes (of course, it depends on the size and weight of the onions). In the meanwhile, in a bowl, mix all the ingredients previously mentioned. When the onions are done and cooled, place them in a baking tray, spread the mixture you made on top and let in the oven for few minutes (180° C) to get baked and grilled. I prefered the onions to stay in only for 10 minutes, since I like to have them golden and crisp. In the end, if you like it, served onions with few drops of a delicate yogurt sauce.
